1 kilo of baby potatoes
5 slices of bacon
1 stick of celery, cut into pieces
2 green onions chopped
2 tablespoons sweet and sour pickled onions The Stuffers
100ml olive oil
2 tablespoons of Balsamic vinegar with orange To Filema tis Lelas
half a bunch of chopped parsley
Salt – Pepper
We wash and boil the potatoes with their skins on until they are soft, without falling apart. Then we strain them and put them under cold running water to cool down. Meanwhile, we cook the bacon in a pan or grill and cut it into small pieces. In a large bowl, we add the celery, green onions, pickled onions, bacon, potatoes and parsley and season with salt and pepper. In a small bowl, we mix the olive oil with the balsamic vinegar and add it to the large bowl, mixing all the ingredients together, until the potatoes absorb the liquids. We serve the potato salad cold right from the fridge as a side dish or we warm it up if we want it as a main meal.
