Lentil Salad with smoked mackerel

A delicious salad, that makes the ideal meze for ouzo.

200 gr Elpida Hellas Lentils
1 bay leaf
1 green bell pepper diced
1 sweet red pepper diced
2 spring onions chopped
½ cucumber (or 1 small cucumber) peeled and diced
150 gr smoked mackerel fillets diced
2 tablespoons drained capers
3 tablespoons chopped dill
Black pepper

For the dressing
1 teaspoon Dolopia red pepper spread with Trinidad Scorpion pepper
4 tablespoons extra virgin olive oil
2 tablespoons Green & Blu Balsamic Vinegar
