Delicious handmade pasta with an aroma of Greece! “Goglies” Pasta or Jolies as they are called is a traditional dish from the region of southern Evia. They are easy to make with ingredients that you always have at home and they are very tasty!
You can also cook for a good cause, using Wise Greece products! Try the handmade “goglies” pasta with “Greek Salad” sauce, with crumbled feta cheese and Adam Herbs mint!
Ingredients for pasta for 6 servings:
500gr All purpose flour
1 jar Greek Salad Sauce Simply Greek for Wise Greece
200ml fresh cold milk (or as much as it is needed)
1 egg
100ml Agora extra virgin olive oil
A bit of salt
1/2 tablespoon buttermilk
Cooking instructions:
Pour the flour and the salt in a large bowl. Add the egg and the oil, begin to knead the flour and slowly add the cold milk. Knead in your hands until you have a homogeneous dough.
Wrap the dough with a cling film and let it rest in the refrigerator for one hour before you use it. Then, mold the dough into long strips of one meter in a well-floured surface. Cut the strips into small pieces of 2 cm and push each piece in half with your finger to form a cavity in the middle, which will help the pasta to boil more easily.
Tip: If you want to make the pasta a bit lighter, you can omit the egg.
Put water in a large pot, add a little salt and a little oil and cook the “goglies” for 25-30 minutes.
Then drain them with a slotted spoon to a large bowl and add the melted butter. While it is hot, add Greek Salad sauce by Wise Greece, which you dilute slightly with 2 tablespoons water from the pasta, sprinkle 150 gr of crumbled feta cheese on top and a little mint. Stir and serve.
