Quinoa with vegetables

A tasty and quick salad, in which you can use any vagetable …always with Wise Greece products!


200g white quinoa
1 onion, finely chopped
2-3 carrots
1 yellow & 1 red pepper
1 zucchini
2 1/2 tsp. olive oil
ENA ENA Organic thyme

Rinse the quinoa several times, strain it and put it in a saucepan with 1 1/2 cup of water and a little salt. As soon as it comes to a boil, lower the heat, cover and let simmer for about 20 minutes, until all the water is absorbed and the quinoa is completely softened.

Sauté a little the onion, peppers, carrot and zucchini to soften.

Transfer all the ingredients into a bowl and stir.

Add the thyme, salt and freshly ground pepper.

We can enjoy it as a hot or cold salad!
