This recipe with olive oil and strawberries is the “Mediterranean” version of this famous tart! Let’s try it for a good cause …

Ingredients
For the crust:
500ml of milk
1 egg
250gr flour
1 pinch of salt
100ml olive oil Green n Blu with lemon
4 tablespoons of Chrisomelo oak honey
For the cream:
4 egg yolks
3 tea spoons of honey
1 vanilla branch
1 sheet of gelatin
200ml whole fat milk
500gr Strawberries
A few leaves of Adam Herbs organic mint
Cooking instructions
In a deep bowl, add the flour and the olive oil and mix the mixture thoroughly with your hands. Then add the milk, egg (whipped), salt and honey and stir well until the ingredients are mixed together. Leave the dough covered in the refrigerator for 30 minutes.
In the meantime, prepare the cream. Put the eggs, honey, vanilla and milk in bain marie and mix well without boiling. Soak the gelatin in water, drain it and add it into the mixture. Stir until the cream starts to boil and then pull off the bowl and put it in the refrigerator to cool.
Get back to the dough, open it with a rolling pin and place on an oiled pie sheet. Drill it with a fork in different parts and bake it for 20-30 minutes with special cooking beans to avoid inflating. Then remove it from the oven, let it cool and once you are ready to serve, pour over the cream and decorate it with strawberries and mint leaves.
