Another delicious cake inspired by our beloved Chef Carolina Doriti, using the Wise Greece products!…
Ingredients:
120gr butter at room temperature
120gr Turbinado (Demerara) sugar + 2-3 tsp extra for sprinkling on top
2 eggs at room temperature
1 tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground clove
¼ tsp salt
145gr all-purpose flour
1 tsp baking powder
30ml brandy
60gr golden raisins by Prigipissa Stafida
270gr peeled & diced apples (2-3 apples)
Cooking instructions:
Preheat oven to 350F / 180C.
Grease and flour a round (around 30 cm diameter) cake tin.
Pour brandy a small bowl and soak in the raisins. Set aside.
Mix flour, salt and baking powder in a bowl and set aside.
Using a stand or handheld mixer cream the butter and sugar until creamy and smooth.
Add in the eggs -one at a time- while beating at medium speed. Mix in the cinnamon, ginger and clove.
Drain the raisins, set raisins aside and add the brandy into the butter and sugar mix. Blend to incorporate.
Gradually start adding in the flour mix into the butter mix, while beating at low speed, until just combined.
Using a rubber spatula, fold the apples and raisins into the mixture until just combined. Pour the mix into the prepared cake tin. Sprinkle with the remaining sugar and bake for 35 minutes or until a knife inserted into the centre comes out clean.
Serve warm or at room temperature.
