Bagel with roasted tomatoes, Kalamata olive paste and crumbled feta

Our beloved Chef Carolina Doriti, prepares a sandwich full of Greek taste, delicious and most importantly… healthy!

1 whole grain, seeded bagel
1 small tomato, thinly sliced
½ tsp dried oregano
Fresh rocket leaves
70 gr crumbled feta
1 tbsp Organic Kalamata olive paste by Elea Terra
1 tsp olive oil
Freshly ground black pepper

Cooking Instructions:
Preheat the broiler at 190C. Line a baking tray with parchment paper. Arrange the sliced tomatoes. Drizzle with olive oil, sprinkle with dried oregano, salt and black pepper to taste. Broil for 10-15 minutes until the tomatoes are cooked.

Slice the bagel in two and lightly toast.

Spread the olive paste on the base, sprinkle half the feta on top and then arrange the rocket leaves on top. Place the tomatoes and sprinkle on top with the rest of the feta. Top with the other half of the bagel and serve!
