Baked phyllo cheese nests with tomato, anthotyro and thyme sauce

Pies almost always, are made in the oven. But there are also those that we can easily make in the pan!

Ingredients:
500gr. strong flour (wheat flour for bread)
320ml lukewarm water
1 cube of fresh yeast 25gr. or 1 sachet of dry yeast
1 pinch of sugar
1 tbsp. olive oil
1½ tbsp salt
a little flour to open the dough
Zucchini
Eggplants
Kalamata olives with Mediterranean Herbs by Green & Blu
Peppers (any color you like)
Chutney with fig and pineapple by Saza
Onion
Color my salt green Biodinami
Pepper, Olive oil

Cooking instructions:
To make the dough, put the flour and salt in a bowl and mix with a spoon. We make a puddle in the center. Dissolve the yeast in water and add the sugar. Cover with cling film and leave to activate for 10 minutes. When the surface foams, it is ready. Pour the activated yeast into the flour. Pour the olive oil in the water and all together, in the flour. Stir circularly with a spoon, from the center to the outside. When the dough is ready, put it on the counter, so you can work with it.

With your hands start to knead with strong movements. Pull the dough, opening it and reassembling it. The dough should be soft, elastic and pliable. Lightly flour a deep bowl and put in the dough. Cover with a damp towel or foil and let it double in volume for about 2 hours at room temperature or 1 hour in a warm place. After the dough rises, divide it into 4 pieces. Keep one for our pie and put the rest in the freezer.

Cook the dough in a deep pan with some extra virgin olive oil. You can grill the vegetables at the same time. When the dough is golden brown, remove from the heat and spread on it the chutney with fig and pineapple. Put on top the cooked vegetables, add some Color my salt green, grate fresh pepper and finish, sprinkling the pie with some olive oil. Put it in the oven for 10 minutes and enjoy!
