Dakos (Greek rusks) salad with mashed avocado and extra virgin olive oil with chili

Time to enjoy our favorite dako, in a more modern version. Chef Carolina Doriti is inspired by Wise Greece products and cooks very easy, quick and delicious recipes in our new Wise Home Cooking series.

Ingredients for 4 people:
Cretan Round Rusks from Wise Greece
2 avocados
1/2 orange bell pepper, diced
1 small cucumber, diced
8-10 cherry tomatoes cut into four or six, depending on their size
1 small red onion, diced
1-2 tbsp pumpkin seeds
1-2 tbsp extra virgin olive oil
2 tbsp Olive oil with chili Green n Blu + extra for serving
Juice from 1 lemon (50-60ml)
1 tbsp dried oregano Adam Herbs
Salt and pepper
1 tbsp fresh cilantro, roughly chopped
3-4 tbsp crumbled feta for topping (optional)

Cooking instructions:
We dip the rusks for a second in a bowl with fresh water. Place on a plate and drizzle with extra virgin olive oil. Peel and roughly mash the avocados with a fork, add in the lemon juice and mix. Mix in the diced pepper, cucumber, cherry tomatoes, onion, pumpkin seeds, cilantro (if using), oregano, salt and pepper. Add the chili olive oil and mix again. Serve on top of the rusks and sprinkle with crumbled feta if you wish. Drizzle with a bit of extra chili oil on top and serve.
