WISE HOME COOKING Easy Sweet and Sour Chicken with Spicy Pineapple Chutney

An easy and quick Chinese recipe for sweet and sour chicken, by our beloved Chef Carolina Doriti, with Wise Greece products


Ingredients for 4 servings:

650gr. chicken thigh or breast fillets
2-3 tablespoons corn starch
Salt
Szechuan pepper (alternatively use black pepper)
1 red bell pepper
1 yellow bell pepper
1 large onion
200gr. fresh pineapple
3 tablespoons olive oil or other vegetable oil
450gr. spicy pineapple chutney Το Filema tis Lelas

Rice to serve
Fresh coriander leaves to serve (optional)
Toasted sesame seeds to serve (optional)


Cooking Instructions:

Dice the peppers into bite-sized pieces. Cut the onion and pineapple into similar sized pieces.
Likewise, cut the chicken into bite-sized pieces and place into a bowl. Season with salt and pepper and add in the cornstarch. Mix well so that the chicken pieces are evenly coated with corn starch.
Place a wok or other deep pan on medium high heat. Add in 2 tbsp oil and sauté the chicken, stirring for 5-7 minutes until cooked through and slightly browned. Transfer onto a platter.
Place the same pan on medium high heat. Add in the remaining oil and sauté the onions and peppers until the onions turn glossy. Add in the pineapple chunks, season with a bit of salt and pepper, and stir fry for another couple of minutes. Return the chicken into the pan, stir fry with the rest of the ingredients for another couple of minutes and pour in the chutney. Lower heat and gently simmer for 8-10 minutes, stirring occasionally.

Serve with rice, sesame seeds and fresh coriander leaves.
