Ingredients:
250gr kale
2 1/2 tablespoons olive oil flavored with garlic by Green & Blu
25gr raw cashews
25 gr white, raw almonds or almond flakes
20gr pumpkin seeds
1/2 tsp Fleur de sel by Salt Odyssey
1/2 tsp ground coriander seeds
6 tbsp nutritional yeast + a bit extra sprinkling
1/2 tsp mustard powder
1 tsp coconut sugar
1/2 tsp Greek smoked paprika by Biodinami
Pinch of cayenne or black pepper
Cooking instructions:
Preheat oven at 140°C. Wash kale, remove stems and tear leaves into bitesized pieces (not too small as they tend to burn quite easily. Dry thoroughly (if wet or moist, they won’t go crispy). Dump them in a bowl and drizzle with olive oil, toss. Put all the rest of the ingredients in a blender and powder. Add the mix to the leaves and toss. Lay parchment paper on two baking trays and divide the leaves between the two. Sprinkle them with a bit extra nutritional yeast (no more than a tablespoon for each tray.). Bake for about 25-30 minutes until crispy. In between you will need to keep an eye on them, toss them every now and then and rotate the trays so that they cook evenly and prevent them from burning.
