Pancakes with aronia (black chokeberry) & orange marmalade, fresh figs & sesame seeds

Chef Carolina Doriti creates for our new Wise Home Cooking Series, fluffy, delicious and very easy pancakes with the Wise Greece products, for breakfast, brunch or any other time of the day!

 

For 9 pancakes:
60gr melted cow’s milk butter
440gr milk
1 large egg
50gr sugar
12gr baking powder
¼ tsp baking soda
¼ tsp salt
290gr all purpose flour
1 tsp vanilla
Butter for frying
4-5 fresh figs sliced in rounds
1 jar aronia jam with orange by Dolopia
3-4 tablespoons of warm water
3-4 tsp toasted sesame seeds

Cooking instructions:
Shift flour in a bowl and mix in all dried ingredients. Pour the milk in a separate large bowl and beat with the egg. Make sure the butter is cooled down and mix it in. Start adding the dried ingredients into the wet ingredients. Mix until just incorporated. Don’t overmix and don’t worry if it’s lumpy. Let the mix stand for ten minutes.
Heat a non-stick pan over medium-high heat. Add a teaspoon of butter and allow it to melt. Add a full ladle of the mix in the pan and gently spread it out to form a round pancake. Let it cook until bubbles form on the top and you can easily flip it. Let it cook for another few minutes on the other side until nice and golden. Repeat with the rest of the mix.
In a small bowl add 6 tablespoons of jam and mix it with the warm water until its consistency is light enough to resemble a syrup (you will pour this over your pancakes at the end).
Place a pancake on a plate. Add a full teaspoon of the jam in its center and gently spread it out. Place a second pancake on top and repeat. Place a third pancake and pour over 3 tablespoons of the marmalade syrup. Place some sliced figs on top and sprinkle with sesame seeds.
