Who said that the “humble” cauliflower can’t be the ultimate protagonist of a table? Our beloved Chef Carolina Doriti is inspired by the Wise Greece products and creates easy, quick and delicious recipes for our new Wise Home Cooking series.
1 large cauliflower (approx. 700gr)
5-6 tbsp Sweet and sour sauce by Simply Greek for Wise Greece
70gr crumbled feta
1 ½ tbsp chopped parsley
Ground black pepper
Extra virgin olive oil for serving
Wash the cauliflower and keep the leaves if fresh. Fill a large saucepan with fresh water and bring to boil. Add salt and put in the cauliflower upside down, stem facing up. Boil for about 7-8 minutes. Remove and place upside down again in a colander. Give it a few minutes to strain well. Meantime preheat oven at 170C and put parchment paper in a baking tray.
Place the cauliflower (good side up this time) on the baking tray and rub with the sweet and sour sauce. Place in the oven and bake for about 1 hour. Mix the feta and parsley, add some black pepper and mix well. Remove from the oven an add the feta mix evenly all around the top part of the cauliflower. Place back in the oven and bake for another 10-15 minutes until the feta has melted and started turning golden.
