Delicious and full of aroma apple pie from our beloved Chef Carolina Doriti, with Wise Greece products, for our new series Wise Home Cooking!
Ingredients for 8 portions:
For the pastry
190gr butter, melted at low heat
600gr all-purpose flour
1 1/2 tsp baking powder
2 eggs separated
90gr brown sugar (demerara) + extra for sprinkling at the end
115ml Cognac (brandy)
1 ½ tbs lemon juice
Zest from 1 unwaxed lemon
1 ½ tbs almond milk
For the filling
860gr apples peeled and diced
2 tsp cinnamon powder
3/4 tsp ground clove
2 tbsp brown sugar
2 tbsp all-purpose flour
250gr Black currant spread with almonds by Prigipissa Stafida
Cooking instructions:
Preheat the oven at 170C.
The Pastry
Allow the butter to slightly cool. Sift flour into a large bowl and mix in baking powder and sugar. Pour in the butter and start gently kneading. In a second bowl mix the cognac, egg yolks, lemon zest and juice and almond milk. Start pouring it into the flour mix while kneading until all is incorporated. The dough needs to be smooth and not sticky. Separate it into two equal pieces and form balls. Take the first one and roll it out into a circle large enough to go into a 25-30 cm pie plate. Line it with the bottom crust and trim the ends all around.
The Filling
Place the diced apples in a large bowl. Mix in the black currant and almond spread. Add in the cinnamon and clove, the sugar and flour and stir.
The Pie
Fill the pie with the apple mixture, laying it evenly on top. Roll out the second piece of pastry and create a lattice pie crust by cutting the top layer into even strips. Lay them vertically and horizontally and start weaving them. Beat the egg whites and with it brush the crust. Sprinkle with brown sugar and bake for about 30 mins until golden.
