Chopped Crispy Salad with Cauliflower & Kale

Fruits, vegetables and nuts are the key ingredients, for a very special salad from our beloved Chef Carolina Doriti, using the Wise Greece products.

Ingredients (4-6 servings):
½ cauliflower (medium sized)
2 cups chopped kale
Seeds from one medium-sized pomegranate
1 kiwi peeled and diced
1 small cucumber (Lebanese cucumber), diced
2-3 red radishes, diced
1 green apple, diced
1 red onion, chopped
2 clementines peeled and cut into small pieces
1 celery rib thinly sliced
3 tbsp chopped dill
½ cup coarsely chopped almonds

Juice from 1 lemon (4-5 tbsp)
45ml Extra virgin olive oil by Theseus
Salt, freshly ground black pepper

Cooking instructions:
Wash the cauliflower and allow to drain for abut 15 minutes, upside down. Finely chop it (including the stems) and place it in a large bowl. Add in the rest of the salad ingredients.
In a second smaller bowl prepare the dressing. Add in the lemon juice and gradually poyr in the olive oil while whisking vigorously. Season with salt and pepper to taste.
Add dressing into the salad and mix well.
