Ingredients for 4 servings:
2kg mussels (with shell), scrubbed and debearded
1 onion, chopped
3 garlic cloves, chopped
1 spring onion, chopped (green part too)
2 bay leaves
330ml Red Ale beer by Karma
1 tbsp mustard seeds
2 tbsp olive oil
2 tbsp parsley, chopped
Pinch of salt
Black pepper
Cooking Instructions:
Place a large saucepan with a fitting lid on medium high heat. Add in the olive oil and sauté the onion until soft and glossy. Add in the garlic, spring onion, bay leaves, pinch of salt, a bit of black pepper, and the mustard seeds, and stir gently. Add in the mussels, toss, and pour in the beer. Cover and bring the heat down to medium low. Simmer for 8-10 minutes until the mussels open up. Mix in the chopped parsley, add black pepper to taste, and serve with warm bread.
