Ingredients for 4 servings:
300gr Wise Greece Exclusive Vegetable fusilli
2 spring onions, chopped
1 avocado, diced
1 small cucumber, diced
10 teardrop tomatoes, quartered
1 tbsp capers
1 yellow pepper, diced
2 tbsp chopped dill
½ cup frozen edamame or peas
180gr canned tuna in water, strained
6 black olives
7 tbsp olive oil
Juice from 1 lemon
Cook the pasta according to package instructions. Drain and rinse with cold water.
Cut the tuna in bite-sized chunks.
Place all the salad ingredients in a large bowl and toss. In a smaller bowl prepare the dressing by mixing the olive oil with the lemon juice and salt to taste. Drizzle the salad with the dressing, add black pepper to taste, mix, and enjoy!
