Try a new version of the well known greek tzatziki, from our beloved Chef Carolina Doriti and you’ll be surprised!…
Ingredients:
1 avocado
200gr thick Greek yogurt
1 garlic clove, minced
2 tablespoons deseeded and grated cucumber (I keep skin on)
4-5 cherry tomatoes chopped
1 tbsp chopped cilantro
1 tsp chopped dill
3/4 tsp ground cumin
3 tbsp lime juice
1 tsp lime zest
2 tbsp extra virgin olive oil by Theseus + extra for serving
Salt & black pepper
Instructions:
Salt the cucumber (this will help remove its water) and let it stand for 10 minutes. Strain the cucumber really well by pressing it against a fine sieve and squeezing it. Remove any excess water from the yogurt. Peel the avocado and mash it with a fork. Mix it with the yogurt and the rest of the ingredients. Serve with olive oil. Try it with Anthos spinach breadsticks!
