Vegetable Tagliatelle with Leftover Chicken Sauce

Everybody loves tagliatelle! Our beloved Chef Carolina Doriti is cooking a colorful and delicious dish, using the Wise Greece products for our new Wise Home Cooking Series!

1 onion, chopped
2 garlic cloves, chopped
2 bay leaves
1 tsp dried marjoram
½ tsp Organic oregano by Adam Herbs
370gr chopped tomatoes (you can use canned)
180ml water or chicken stock
280gr chopped leftover chicken (skinned and boned)
1 tbs fresh basil, chopped + extra for garnish (optional)
1 tbs olive oil
Freshly ground black pepper
45gr grated parmesan

400gr Wise Greece Exclusive vegetable tagliatelle
3 tbs olive oil
Shaved parmezan

Cooking instructions:
Cook the pasta al dente, following the instructions on the package. Strain and mix with 2 tbs olive oil.
Place a large skillet on medium high heat. Add 1 tbs olive oil and saute the onions and garlic, stirring for a couple of minutes. Add the chopped tomatoes, bay leaves, marjoram, oregano, the water or stock and season. Stir gently in the chopped chicken and bring the heat down to medium low. Simmer for 10-15 minutes until the sauce starts to thicken. Mix in the chopped basil, adjust seasoning, and simmer for another 2-3 minutes. Add in the parmesan and remove from heat. Toss in the pasta and drizzle with about a tablespoon of olive oil. Serve with freshly ground pepper, shaved parmesan and some fresh basil.
