An\u00a0impressive dish comes from our\u00a0beloved Chef Carolina Doriti, cooked with Wise Greece\u00a0products<\/a>, for our new\u00a0Wise Home Cooking Series<\/a>!<\/p>\n

Ingredients:
\n<\/strong>1 kg Wild boar cut into large chunks
\n1 tbsp olive oil
\n3 tsp butter
\n1 large onion, chopped
\n1 large celery stalk, chopped
\n1 large carrot, chopped
\n4 garlic cloves cut in half
\n250 gr small brown agaricus mushrooms, whole
\n15 gr dried porcini mushrooms
\n100 ml Vinsanto wine or a sweet red wine like Port or Madeira
\n4-5 sprigs fresh thyme + extra for garnish (optional)
\n1 sprig fresh rosemary
\nJuice from one large orange
\n1tsp orange zest
\n1 jar (225 gr)\u00a0pomegranate chutney To Filema tis Lelas<\/a>
\nWarm water or vegetable\/mushroom broth
\nSalt, black pepper<\/p>\n

Cooking instructions:
\n<\/strong>Soak the porcini mushrooms in 100 ml warm water for 20 minutes. Strain and keep all the liquid. Wash the meat, pat dry with paper towels and season with salt and pepper.
\nPreheat oven at 180C.
\nPlace a cast iron Dutch oven on medium-high heat. Add in the butter and olive oil.
\nBrown the meat on all sides and transfer onto a platter.
\nIn the same Dutch oven (if necessary, add some extra butter) saut\u00e9 the onions until soft and glossy. Add in the carrot, celery and garlic and stir for another minute or so.
\nAdd in both mushrooms, season with salt and pepper and stir.
\nReturn meat into the Dutch oven and gently toss.
\nPour in the wine, allow the aromas to infuse for a few seconds and add in the thyme & rosemary, the chutney and the orange zest and juice.
\nAdd in the reserved mushroom liquid and enough warm water\/broth to just cover the meat.
\nCover and place into the oven. Roast for about 1.5-2 hours.
\nServe ideally with mushed potatoes!<\/p>\n
