Carolina Doriti prepared for\u00a0Wise Home Cooking<\/a>\u00a0a fresh and exotic salad full of flavors, ideal either for an an accompaniment or a fresh main meal!<\/span><\/p>\n

1 cup fresh pineapple, diced into bite-sized pieces
\n1 avocado, sliced into bite-sized pieces
\n1 Lebanese cucumber, cut into half lengthwise and thinly sliced
\n1 spring onion, chopped
\n3-4 red radishes, thinly sliced
\n50 gr wild rocket*
\n20 gr red rocket*
\n20 gr mustard leaves *
\n50 gr baby spinach *
\n100 gr lettuce, sliced
\n2 tablespoons dill, chopped
\n\u00bd cup shelled,\u00a0Wise Greece exclusive<\/a>\u00a0Salted pistachios<\/a><\/p>\n

For the dressing<\/strong>
\n2 tablespoons white wine vinegar
\n6 tablespoons\u00a0Green & Blu Organic Extra Virging Olive Oil with mango & orange<\/a>
\n\u00bd teaspoon orange zest
\nSalt
\nFreshly ground black pepper<\/p>\n

*You may use any mixed salad leaves of your choice that contains rocket and baby spinach, and mix it with the lettuce.<\/p>\n

First make the dressing. In a small bowl whisk the vinegar with the zest. Start adding gradually the olive oil condiment while whisking, until all is incorporated. Season with salt and pepper and set aside.<\/p>\n

In a large bowl add all the salad ingredients, leaving out half the amount of the pistachios nut to decorate your salad.<\/p>\n

Add in the dressing and gently toss. Serve in a platter or salad bowl and sprinkle with the remaining pistachios.<\/p>\n\n\t\t
