Chef Carolina Doriti is inspired by the French cuisine and together with the\u00a0Wise Greece\u00a0products<\/a>, she cooks the greek version of the french ratatouille, for our new\u00a0Wise Home Cooking<\/a>\u00a0series.<\/p>\n

 <\/p>\n

Ingredients for 8 portions:
\n<\/strong>3 medium red onions sliced in 1mm rounds
\n3 long eggplants sliced in 1mm rounds
\n2-3 sweet long peppers sliced in 1mm rounds
\n3-4 zucchinis sliced in 1 mm rounds
\n3 tomatoes sliced in 1mm rounds
\n3-4 potatoes sliced in 1mm rounds
\n2 tsp\u00a0Adam Herbs organic oregano<\/a>
\n2 tbs chopped fresh basil
\n2 tbs chopped fresh parsley
\n2 garlic cloves
\n200ml olive oil + 1 tbs (for saut\u00e9ing)
\nSea salt, black pepper<\/p>\n

For the sauce:
\n<\/strong>2 jars\u00a0Wise Greece Exclusive Greek salad sauce<\/a>
\n200ml water
\n2 garlic cloves, chopped
\n2 tbs chopped basil
\nBlack pepper
\n1 round pan (30-35cm diameter)<\/p>\n

Cooking instructions:<\/strong>
\nFor the sauce: Place a pan on medium heat. Add 1 tablespoon olive oil and lightly\u00a0saut\u00e9e the chopped garlic. Add the Greek salad sauce (both jars) and the water. Bring to boil and simmer for about 10 minutes. Mix in the garlic and black pepper and remove from heat.
\nPreheat the oven at 180C.
\nPour the sauce into the round pan and on top arrange the veggies in alternating patterns, starting from the outer edge and moving to the center, forming a spiral shape.
\nSeason with salt and pepper and sprinkle the oregano.
\nPour the rest of the olive oil in a blender and add in the garlic, chopped basil and parsley. Blend. Pour over the veggies and cover with parchment paper and foil. Bake at 180C for 50 minutes. Uncover and bake for another 20 minutes or until the veggies turn golden and caramelize.<\/p>\n
