Our beloved Chef Carolina Doriti combines her imagination with Wise Greece\u00a0products<\/a>\u00a0and creates a playfull and tasty salad for our new\u00a0Wise Home Cooking<\/a>\u00a0series.<\/p>\n

Ingredients:
\n<\/strong>100gr mixed baby leaves
\n4 radishes, cut in half and then thinly sliced
\n1\/2 fresh mint leaves
\n8-10 strawberries thinly sliced
\n4-5 fresh, young asparagus, trimmed and coarsely chopped
\n3 tbsp fresh, raw peas
\n1 spring onion, chopped
\n2 tbsp\u00a0roasted pistachios without salt Aegina Nuts<\/a>, coarsely chopped
\n120gr haloumi cheese (optional)<\/p>\n

For the dressing:
\n<\/strong>1 full tablespoon\u00a0spicy chutney with orange<\/a>\u00a0To Filema Tis Lelas
\n80 ml extra virgin olive oil
\n3 tablespoons white wine vinegar
\nSalt
\nBlack pepper<\/p>\n

Cooking instructions:<\/strong>
\nFirst, we prepare the dressing. Add the chutney in a bowl and whisk with the vinegar. Gradually start adding the olive oil while whisking. Add Salt and freshly ground black pepper. Store it in a jar in the fridge for up to 7-10 days. Before reusing, let it stand at room temperature for about 10 minutes until it liquifies and give it another whisk.<\/p>\n

Wash and dry the baby leaves a place in a large bowl. Keep a few sliced strawberries, asparagus and pistachios to garnish. Place all the rest of the ingredients along with baby leaves and toss gently. Start adding some of the dressing while tossing.<\/p>\n

If you are using haloumi:
\n<\/strong>Place a small non-stick pan on medium-high heat. Grill the cheese for a couple of minutes on each side, until golden. Cut into cubes and mix in the salad.<\/p>\n
