Velouté pumpkin soup with sage & yogurt

A creamy pumpkin soup that balances simplicity with refined flavor. The aromatic vegetables add body and depth, while the sage offers a subtle, earthy note that elevates the dish. Ideal for a light yet satisfying meal, it’s perfectly served with a dollop of cool yogurt and a touch of freshly ground pepper.

Ingredients

500g pumpkin, peeled and diced
1 carrot
1 small onion
1 tbsp Wise Greece olive oil
1 tsp Wise Greece Exclusive 7-Vegetable Mix
½ tsp Pegasus Organic Sage
500 ml water (or as needed)
2 tbsp strained yogurt
Freshly ground pepper
Salt (if needed)

Preparation
In a pot, sauté the onion and carrot in olive oil until softened. Add the pumpkin, vegetable mix, and water. Simmer until all the vegetables are tender (about 20 minutes). Add the sage and blend with an immersion blender until smooth and velvety.
Serve with a spoonful of yogurt in the center, a sprinkle of freshly ground pepper, and optionally, a sprig of sage for extra aroma.
