Ingredients
For the beef fillets:
2 beef fillets
2 tablespoons olive oil
1 small onion, finely chopped
1 garlic clove, minced
½ cup red wine
½ cup beef stock
1 tablespoon butter
1 teaspoon Wise Greece Exclusive thyme honey
½ teaspoon organic rosemary (Myrovolos Organics)
Salt and freshly ground pepper
For the side (Caramelized Onions):
2 red onions, sliced
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey
Preparation:
Make the sauce:
In a pan, sauté the onion and garlic in a bit of olive oil. Add the wine and let it reduce by half. Stir in the stock, honey, and rosemary, and simmer until the sauce thickens. Add the butter and stir until smooth.
Cook the beef fillet:
Heat olive oil in a non-stick pan and sear the fillets for 3–4 minutes on each side (or longer, depending on preference). Let rest for 5 minutes.
Prepare the caramelized onions:
On low heat, sauté the onions with olive oil until soft. Add the honey and balsamic vinegar and cook until caramelized.
Serve:
Plate the caramelized onions, top with the beef fillet, and drizzle with the red wine sauce.
Optional sides: mashed potatoes or roasted vegetables.
