Mediterranean salad with rice

A refreshing and nutritious Mediterranean salad with rice, vegetables, and aromatic herbs. Perfect for a light meal or side dish, combining healthy ingredients with a fresh lemon dressing for a perfect balance of flavors.

Ingredients
1 cup Agros Pindos Basmati rice
1 eggplant (cut into cubes)
½ cucumber, sliced
1 red bell pepper
1 small onion
2 tablespoons pine nuts
8–10 olives (sliced)
Fresh herbs (parsley, dill) Salt & pepper

For the dressing
3 tablespoons Tenea extra virgin olive oil 
Juice of ½ lemon or 1 tablespoon vinegar
1 teaspoon mustard (optional)
teaspoon oregano

Instructions:
Cook the rice according to package instructions. Sauté the eggplant in a little olive oil until soft. Toast the pine nuts in a non-stick pan until golden. Mix all ingredients in a large bowl. Prepare the dressing by mixing olive oil, lemon juice, mustard, and oregano. Pour the dressing over the salad and toss well. Serve chilled.
