Tell us a bit about yourself. How did you start? What inspired you to get involved with food?
My name is Anastasia Madika and I run a distillery for aromatic plants in the area of Milea, Kozani. I produce edible plant-based and organic floral waters, and our company Madika Organics has been active since 2013. My first contact with distillation happened 20 years ago, during a seminar on the production of essential oils and floral waters from France. It was truly love at first sight.
That’s how the idea was born to explore and focus on the edible use of floral waters.
Tell us about the brand. What does it stand for? What was your purpose in creating it?
As you may have guessed, the brand name comes from my last name and the organic nature of the products. Luckily, it sounds pleasant too. Just as every parent gives their surname to their children, that’s what I did. The choice of name reflects my love and respect for the products I create. My purpose is to share that embrace of care and quality with all of you.
How did you start? What challenges did you face?
I started this innovative idea with lots of energy, passion, and faith in what I love. I faced several challenges in the beginning, mainly from government systems, but I wasn’t discouraged. On the contrary, I became stronger and more determined to believe in and pursue my vision.
Tell us about your products. What makes them different?
The products are 100% plant-based and organically certified. They are derived from the distillation of aromatic plants (lavender, rose, sage, oregano, mountain tea, and rosemary) as well as citrus fruits like orange, lemon, and bergamot. They are easy to use and high quality, created with respect for both people and the environment. What makes our floral waters different is the delicate flavor they bring to food and desserts.

Our raw materials are aromatic plants cultivated through organic farming.
Are there any products you particularly favor?
It’s like asking a mother to choose her favorite child. Each product is unique, with its own aroma, flavor, identity, and special kind of magic—both in food and on the skin.
Give us a few suggestions for using your products (beyond the classic ways, tips, or recipes, etc.)
Floral waters can be used in meat and fish dishes, salads, sauces, and marinades. In baking and pastry, they’re great in cakes, creams, doughs, and more. For a green salad of your choice, you can create a dressing with a mayonnaise-based sauce and mix it with 4–5 sprays of oregano or sage floral water. And if you want to make it more gourmet, you can use our new citrus floral waters—orange, lemon, or bergamot—in the same way.
