Healthy cocoa, cinnamon, raisin muffins

These muffins combine rich cocoa, fresh orange, cinnamon, and sweet raisins for a tasty and nutritious treat, perfect for any time of day.

Ingredients

200g whole wheat flour
25-30g Simply Greek cocoa
1½ tsp baking powder
½ tsp baking soda
1 tsp cinnamon
A pinch of salt
2 medium eggs
60-80g Crysomelo Flower Honey 
100ml milk (dairy or plant-based, e.g., almond milk)
50ml extra virgin olive oil
Juice and zest of 1 large orange
50-70g Prigipissa Stafida Black currants

Instructions

Preheat the oven to 170–175°C (fan or conventional). Sift the dry ingredients: flour, cocoa, baking powder, baking soda, cinnamon, salt. In another bowl, whisk the wet ingredients: eggs, honey, milk, olive oil, orange juice, and zest. Slowly add the dry to the wet ingredients, mixing gently until combined (don’t overmix). Fold in the raisins evenly. Fill muffin cups and bake for 20–25 minutes or until a toothpick inserted in the center comes out clean. Enjoy!
