Tortillas with Grilled Vegetables & Avocado

The perfect choice for a light, healthy, and satisfying meal. Packed with flavor and nutrients, and super quick to prepare!

Ingredients

2 whole wheat tortillas
1 small eggplant (sliced)
1 zucchini (sliced)
1 red bell pepper (chopped)
1 small avocado (diced)
Salt & pepper
½ tsp Grizo Prasino thyme
2 tbsp guacamole (or mashed avocado with lemon and salt)

Instructions:

Grill the vegetables with olive oil, salt, pepper, and thyme for 10–15 minutes, until tender. Warm the tortillas. Spread the guacamole, add the grilled veggies and diced avocado. Wrap, slice in half, and serve.
