Shrimp saganaki with cherry tomatoes and feta

Shrimp saganaki with cherry tomatoes, feta, and herbs is a traditional Greek dish full of flavor and aroma. Juicy shrimp are gently cooked in a rich tomato sauce with fresh herbs and finished with melted feta, making it a perfect appetizer to accompany ouzo or wine.

300g cleaned shrimp (fresh or frozen)
2-3 tbsp extra virgin olive oil
1 garlic clove, finely chopped
250g cherry tomatoes (halved or whole)
50g feta, crumbled or cubed
1 tsp Grizo & Prasino herbal salt with rosemary, thyme, and orange
Fresh parsley, finely chopped
Salt & freshly ground pepper

Instructions:
Heat the olive oil in a pan and sauté the garlic for 1 minute until fragrant. Add the shrimp and cook for 2–3 minutes on each side. Remove and set aside. Add the cherry tomatoes to the same pan and cook for 5 minutes until softened and their juices released. Return the shrimp to the pan, add oregano, salt, and pepper, and stir gently. Add the feta and parsley. Turn off the heat and let the feta melt slightly for 1–2 minutes. Serve warm with fresh bread or barley rusks.
