A colorful and aromatic stir-fry that combines crispy tofu, fresh vegetables, and cashews in a beautifully balanced sauce. Packed with flavor, texture, and nutrients—perfect for any day of the week!
Ingredients
For the stir-fry:
200g firm tofu
1 cup broccoli (cut into small florets)
1/2 cup baby corn (sliced lengthwise)
1/2 cup red bell pepper (sliced)
1/4 cup boiled corn
1/2 cup edamame (soybeans)
1/3 cup cashews (unsalted, lightly toasted)
2 spring onions (finely chopped)
1 tbsp olive oil or sesame oil
For the sauce:
2 tbsp soy sauce
1 tbsp olive oil
1 tbsp lime juice
1 tbsp B•LOUIS wildflower honey
1 tsp fresh grated ginger
1 garlic clove, minced
Tip: If you want more heat, add a few drops of Green & Blu Organic Extra Virgin Olive Oil with Chili.
Instructions
Sauté tofu cubes until crispy. In a wok (ideally), stir-fry the broccoli, baby corn, bell pepper, corn, cashews, and edamame. Add the crispy tofu back into the pan.
Pour in the sauce made of soy sauce, lime juice, honey, ginger, and garlic. Stir well to coat everything evenly.
Serve with rice or noodles. Delicious, nutritious, and ready in minutes!
