Zucchini rolls with cheese & smoked salmon

A light and fresh appetizer where thin zucchini slices wrap around a creamy filling with a smoky flavor. Grilling the slices gives them a soft texture and mild aroma. Fresh herbs and careful presentation make this dish perfect for festive or summer occasions.

Ingredients

2 large zucchinis
100g cream cheese or a mix of feta & yogurt
100g smoked salmon (or prosciutto as an alternative)
1 tbsp Greek Pony Farm olive oil
Fresh chives or arugula leaves to tie or garnish
A little lemon zest
Freshly ground pepper
(Optional) oregano or dill

 

Instructions

Slice the zucchinis lengthwise into very thin strips. Grill them in a grill pan with a little olive oil for 1–2 minutes on each side, until they have grill marks and soften slightly.For the filling, mash some feta cheese with a spoonful of yogurt, add lemon zest, freshly ground pepper, and chopped fresh herbs of your choice (such as dill, mint, or parsley).Place a small spoonful of the filling on each zucchini slice, add a strip of smoked salmon, and roll it up carefully. You can secure each roll with a chive or place them upright on a serving dish for a more elegant presentation.Drizzle with a little olive oil and finish with some extra fresh herbs on top. Serve chilled or at room temperature as a light appetizer or part of a mezze spread.
