Ingredients:
2 chicken fillets (or half a chicken on the bone)
1 carrot, diced
1 potato, cubed
1 onion, finely chopped
1 garlic clove, minced
1/2 cup rice or Wise Greece Exclusive vegetable-infused orzo
1 zucchini, cubed
1 grated tomato (optional)
1.5 liters chicken broth or water
2 tbsp Elea Terra organic extra virgin olive oil
Juice of 1 lemon
Salt, pepper
Fresh herbs (parsley, dill, or chives)
Instructions:
In a large pot, heat the olive oil and sauté the onion and garlic for 2–3 minutes. Add the chicken and lightly brown it on all sides. Add the potato, carrot, zucchini, and grated tomato (if using). Pour in the broth, season with salt and pepper, and simmer for about 30 minutes. Remove the chicken, shred it, and return it to the soup. Add the rice or orzo and continue simmering for another 10–15 minutes. Once the soup is ready, stir in the lemon juice.
Serve hot, garnished with freshly chopped herbs.
